Ingredients (Serves 2–4)

  • 2–4 chicken breasts (or thighs), cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • ½ cup teriyaki sauce
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • Optional: sesame seeds and chopped green onions for garnish
  • Foil sheets for wrapping

Instructions

1. Preheat Oven

  • Preheat to 400°F (200°C).

2. Prepare Foil Packets

  • Tear 2–4 large sheets of foil.
  • Place chicken, pineapple, bell pepper, onion, and garlic in the center of each sheet.

3. Add Teriyaki Sauce

  • Pour about 2–3 tablespoons of teriyaki sauce over each packet.

4. Seal Packets

  • Fold foil over the ingredients and seal edges tightly to trap steam.

5. Bake

  • Place packets on a baking sheet.
  • Bake for 25–30 minutes, until chicken reaches 165°F (74°C) and is cooked through.

6. Serve

  • Carefully open packets (watch for hot steam!).
  • Garnish with sesame seeds and green onions.
  • Serve with rice or noodles if desired.

Tips for Best Results

  • Marinate chicken in teriyaki sauce for 30 minutes before cooking for extra flavor.
  • Add other veggies like snap peas, carrots, or mushrooms.
  • Squeeze a bit of lime juice over the top before serving for freshness.
