The Ultimate Classic Pig Pickin’ Cake: A Slice of Southern Sunshine

Introduction

Bright, fruity, and irresistibly moist, Pig Pickin’ Cake is a beloved Southern dessert that’s as cheerful as a summer afternoon. Traditionally served at barbecues and pig roasts (hence the name), this cake is known for its light texture, tropical flavor, and fluffy whipped topping.

If you’re looking for a crowd-pleasing dessert that tastes like sunshine on a plate, this is it.

Why It’s Called Pig Pickin’ Cake

The name comes from Southern pig roasts where guests would “pick” pulled pork straight from the roast. This cake became a staple at those gatherings because it’s:

  • Light and refreshing
  • Easy to transport
  • Perfect after a hearty barbecue meal

It’s also sometimes called Mandarin Orange Cake.

Ingredients

For the Cake

  • 1 box yellow cake mix
  • 4 large eggs
  • ½ cup vegetable oil
  • 1 can (11 oz) mandarin oranges (with juice)

For the Frosting

  • 1 container (8 oz) whipped topping
  • 1 box (3.4 oz) instant vanilla pudding mix (dry)
  • 1 can (20 oz) crushed pineapple (with juice)

Instructions

Step 1: Prepare the Cake

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix cake mix, eggs, oil, and entire can of mandarin oranges (including juice).
  3. Beat until smooth, breaking up orange segments slightly.
  4. Pour into a greased 9×13-inch baking dish.
  5. Bake for 25–30 minutes or until a toothpick comes out clean.
  6. Allow cake to cool completely.

Step 2: Make the Frosting

  1. In a bowl, combine crushed pineapple (with juice) and dry pudding mix.
  2. Fold in whipped topping gently until fully combined.
  3. Spread evenly over cooled cake.

Step 3: Chill Before Serving

Refrigerate for at least 2 hours before serving to allow flavors to blend.

Why Everyone Loves It

  • Incredibly moist and tender
  • Light and not overly sweet
  • Tropical citrus flavor
  • Perfect for potlucks and gatherings
  • Even better the next day

Optional Add-Ins

  • Sprinkle toasted coconut on top
  • Add chopped pecans for crunch
  • Garnish with extra mandarin slices

Storage Tips

  • Keep refrigerated
  • Best enjoyed within 3–4 days
  • Cover tightly to prevent drying out

Conclusion

Pig Pickin’ Cake is more than just dessert — it’s a Southern tradition. With its vibrant citrus flavor and creamy pineapple topping, it delivers the perfect balance of richness and freshness.

One bite, and you’ll understand why it’s considered a true slice of Southern sunshine.
