🥕 Veggie Cream Cheese Spread

Ingredients

  • 8 oz (1 package) cream cheese, softened

  • ¼ cup finely chopped cucumber (seeded if watery)

  • 2 tbsp finely chopped red bell pepper or sweet pepper

  • 2 tbsp finely chopped green onions or chives

  • 1 tbsp finely chopped fresh dill or parsley

  • 1 small garlic clove, minced (optional)

  • Salt and pepper, to taste

Instructions

  1. Prepare veggies:
    Finely chop all veggies and herbs so they mix evenly in the cream cheese.

  2. Mix:
    In a bowl, combine softened cream cheese, chopped veggies, garlic (if using), and lemon juice.

  3. Season:
    Add salt and pepper to taste. Mix well until everything is evenly incorporated.

  4. Chill:
    Cover and refrigerate for at least 30 minutes to let flavors meld.
