Here’s a simple and comforting slow cooker meal using frozen broccoli and a few other ingredients — easy to prep and full of flavor.


🥦 Slow Cooker Broccoli & Chicken Casserole

Ingredients

  • 4 cups frozen broccoli florets
  • 2 chicken breasts (or thighs), cut into bite-sized pieces
  • 1 cup cooked rice (optional, for a heartier meal)
  • 1 cup cream of mushroom soup (or cream of chicken for variation)
  • ½ cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Layer ingredients in the slow cooker:
    • Start with chicken pieces, then frozen broccoli, onion, and garlic.
    • Add cooked rice (if using) and pour the cream soup over everything.
  2. Season with salt and pepper.
  3. Cook:
    • Low: 4–5 hours
    • High: 2–3 hours
  4. Add cheese in the last 15–20 minutes of cooking so it melts nicely on top.
  5. Serve warm — it’s creamy, filling, and perfect for a cold day!

Tips for Extra Flavor

  • Sprinkle paprika, thyme, or Italian seasoning before cooking.
  • For a crunch, top with toasted breadcrumbs just before serving.
  • Use Greek yogurt instead of cream soup for a lighter, protein-rich version.
