Healthy Pickled Beets Recipe

Here’s a simple and healthy pickled beets recipe that’s flavorful, tangy, and keeps well in the fridge. This version avoids excessive sugar while still being delicious.


🥗 Ingredients

  • 4–5 medium beets, washed and trimmed
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2–3 tablespoons honey or maple syrup (optional, for slight sweetness)
  • 1 teaspoon salt
  • 1 teaspoon black peppercorns
  • 1–2 garlic cloves, smashed
  • Optional: bay leaf, cinnamon stick, or fresh dill for extra flavor

📝 Instructions

  1. Cook the beets:
    • Boil or steam the beets until tender (about 30–40 minutes for medium beets).
    • Let cool slightly, then peel and slice into rounds or wedges.
  2. Prepare the pickling liquid:
    • In a small pot, combine vinegar, water, honey, salt, peppercorns, and any optional spices.
    • Bring to a gentle boil, then reduce heat and simmer for 5 minutes.
  3. Pack the jar:
    • Place the sliced beets and garlic (and dill if using) into a clean jar.
    • Pour the warm pickling liquid over the beets, making sure they’re fully submerged.
  4. Cool and refrigerate:
    • Let the jar cool to room temperature, then seal and refrigerate.
    • Beets are ready to eat in 24 hours, but flavor improves after 2–3 days.

💡 Tips

  • Use fresh, firm beets for the best texture.
  • For a spicier version, add a few slices of fresh ginger or a pinch of chili flakes.
  • Pickled beets can last up to 2–3 weeks in the fridge.

This recipe keeps them healthy by limiting added sugar and focusing on natural flavors from vinegar, herbs, and spices.
