  • 4 medium beets, washed and trimmed
  • 1 cup apple cider vinegar
  • 1 cup water

  • 2 garlic cloves, peeled and smashed

Instructions

  1. Cook the Beets:
    • Boil, steam, or roast the beets until tender (about 30–40 minutes for boiling).
    • Let them cool slightly, then peel and slice into wedges or rounds.
  2. Prepare the Pickling Brine:
    • In a saucepan, combine apple cider vinegar, water, honey, salt, and optional spices.
    • Bring to a simmer, stirring until honey and salt dissolve.
  3. Pack the Beets:
    • Place beet slices in a clean jar (or jars).
    • Add smashed garlic, peppercorns, and any optional herbs or spices.
  4. Add the Brine:
    • Pour the hot vinegar mixture over the beets until they are fully submerged.
    • Let the jar cool to room temperature, then refrigerate.
  5. Marinate:
    • Allow beets to pickle for at least 24–48 hours for full flavor.
    • They can last in the fridge for up to 2–3 weeks.
