Ingredients:

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 cup green beans, chopped
  • 1 cup kale or spinach, chopped
  • 1 can (14 oz) diced tomatoes (no salt added)
  • 6 cups vegetable or chicken broth (low sodium)
  • 1 cup cooked lentils or chickpeas (optional for extra fiber)
  • 1 tsp turmeric powder (anti-inflammatory)
  • 1 tsp cumin powder
  • Salt & pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft and fragrant.
  3. Add carrots, celery, and zucchini; cook 5 minutes stirring occasionally.
  4. Pour in broth and diced tomatoes; bring to a boil.
  5. Add green beans and lentils/chickpeas if using. Reduce heat and simmer 15-20 minutes.
  6. Stir in kale/spinach, turmeric, cumin, salt, and pepper; cook 5 more minutes until greens wilt.
  7. Taste and adjust seasoning.
  8. Serve warm, garnished with fresh herbs.
