Irish Sausages with Caramelized Onion Gravy Recipe

Ingredients:

  • For the sausages:
    • 6 Irish pork sausages (or your favorite quality pork sausages)
    • 1-2 tbsp oil or butter for frying
  • For the caramelized onions:
    • 2 large onions, thinly sliced
    • 2 tbsp butter or oil
    • 1 tsp sugar (optional, helps with caramelization)
    • Salt and pepper to taste
  • For the gravy:
    • 2 tbsp all-purpose flour
    • 2 cups beef or vegetable broth (use stock for richer flavor)
    • 1 tsp Worcestershire sauce (optional)
    • Salt and pepper to taste

Instructions:

  1. Cook the sausages:
    • Heat oil or butter in a pan over medium heat.
    • Add sausages and cook, turning occasionally, until browned and cooked through (about 12-15 minutes). Remove and keep warm.
  2. Caramelize the onions:
    • In the same pan, add butter/oil if needed.
    • Add sliced onions and a pinch of salt. Cook slowly over low heat, stirring occasionally, for about 20-25 minutes until golden brown and soft.
    • Add sugar halfway through if using, to speed caramelization.
  3. Make the gravy:
    • Sprinkle flour over the caramelized onions and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
    • Slowly add broth while stirring constantly to avoid lumps.
    • Add Worcestershire sauce, salt, and pepper.
    • Simmer gently for 5-10 minutes until the gravy thickens.
  4. Serve:
    • Plate the sausages and pour the onion gravy over them.
    • Traditionally served with mashed potatoes, colcannon, or buttered vegetables.
