🌺 Hibiscus Flower Gelatin with Cinnamon & Cloves

🧾 Ingredients

  • 2 cups dried hibiscus flowers (or 4–5 cups fresh petals)
  • 3–4 cups water
  • 1/2 to 3/4 cup sugar (adjust to taste)
  • 1 cinnamon stick
  • 3–5 whole cloves
  • 2–3 tbsp unflavored gelatin powder (or 2–3 sheets gelatin)
  • 1/4 cup cold water (for blooming gelatin)
  • Optional: lemon juice or rose water for aroma

🔥 Instructions

1. Make hibiscus infusion

  • Boil water in a pot.
  • Add hibiscus flowers, cinnamon stick, and cloves.
  • Simmer for 10–15 minutes until the water turns deep red and aromatic.

2. Strain & sweeten

  • Strain out flowers and spices.
  • While warm, stir in sugar until fully dissolved.
  • Taste and adjust sweetness or add a splash of lemon juice if you like a slight tang.

3. Prepare gelatin

  • In a small bowl, sprinkle gelatin over cold water.
  • Let it sit for 5–10 minutes until it blooms (absorbs water and becomes jelly-like).

4. Combine

  • Gently heat the hibiscus liquid again (do not boil).
  • Add bloomed gelatin and stir until completely dissolved.

5. Set

  • Pour into molds, glasses, or a shallow dish.
  • Refrigerate for 3–4 hours until fully set.

🌿 Serving ideas

  • Serve chilled cubes with mint leaves
  • Pair with yogurt or cream
  • Add fruit pieces like orange or pomegranate for texture

🌸 Flavor note

  • Hibiscus gives a tart, cranberry-like taste.
  • Cinnamon adds warmth.
  • Cloves give a deep, slightly smoky spice aroma.
