🫘 Seasoned Brown Beans

Ingredients

  • 2 cups dried brown beans (or pinto beans), soaked overnight
  • 4–5 cups water
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1–2 tbsp oil or butter
  • 1 tsp salt (adjust later)
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • Optional: small piece of smoked meat or bone for flavor

Instructions

  1. Cook Beans:
    • Drain soaked beans and add to a pot with fresh water.
    • Bring to a boil, then simmer for 1–1.5 hours until tender.
  2. Add Flavor:
    • In a pan, sauté onion and garlic in oil until soft.
    • Add to the beans along with salt, pepper, and paprika.
  3. Simmer:
    • Let everything cook together another 20–30 minutes until thick and flavorful.

🍞 Soft Cornbread

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar (optional)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 egg
  • ¼ cup melted butter or oil

Instructions

  1. Preheat Oven:
    • 375°F (190°C). Grease a baking pan.
  2. Mix Batter:
    • Combine dry ingredients in one bowl.
    • In another, whisk milk, egg, and butter.
    • Mix together until just combined.
  3. Bake:
    • Pour into pan and bake 20–25 minutes until golden.

  • Ladle hot beans into a bowl.
  • Serve with a slice of warm cornbread on the side (or crumble it right into the beans).
