  • 1 cup grated cheese (traditionally Gruyère or Swiss)
  • Fresh thyme (optional)

Instructions

1. Caramelize the onions
Heat butter and olive oil in a large pot over medium heat. Add the sliced onions and cook slowly for about 25–30 minutes, stirring occasionally, until they become deep golden brown and sweet.

2. Add garlic and seasoning
Stir in the minced garlic and cook for another minute. Add a pinch of salt, pepper, and the optional sugar to enhance caramelization.

3. Deglaze the pot
Pour in the white wine (if using) and scrape the bottom of the pot to release flavorful browned bits.

4. Add broth and simmer
Pour in the broth and add thyme if desired. Bring the soup to a gentle simmer and cook for 15–20 minutes to allow the flavors to blend.

5. Prepare the bread
Toast the bread slices in the oven or toaster until crisp.

6. Assemble and melt the cheese
Ladle the soup into oven-safe bowls, place a slice of toasted bread on top, and cover with grated cheese. Broil in the oven for 2–3 minutes until the cheese melts and becomes bubbly and golden.
